Does anyone know of an easier way to fill up the gas tank and not walk away smelling like gas? So much gas is spilled when I fill up. What are some other tactics for topping off my gas tank with out making a huge mess?

Easier than what?
When I got my V-Strom it took me exactly 1 fill up to determine which direction to hold the nozzle on fill-up. Many people get off the motorcycle and fill up on the sidestand. Personally I like to sit on the bike so I can get as much in as possible, on my Strom I need to point the nozzle to the back of the tank (toward me) in order for the gas to not splash everywhere. Try pointing the nozzle in different directions in the tank and see how that works.
